Get yourself organised

Make up your 4-ingredient almond shortbread dough. Separate your dough into three balls, one small, one that you will colour, and two larger ones for the base of your biscuits. Being prepared stops you from forgetting anything, and reduces the time these take to make.

Preheat your oven to 170 c (340 f) on the non-fan setting.

Colour your dough

Take your small ball of dough that you are going to colour and put a drop of red food colouring on this. Massage the dough until the dough is evenly coloured, if you want a slightly darker colour add a drop more red and repeat the massaging process. Its always best to go easy on the colour at first and build up to the colour you want. Also, you might want to wear gloves for this process as the colour might stain your hands!

Roll out the dough

Take one of your base dough balls, place this on some baking paper and press it down to about 1 inch thick with your hands. Next place another piece of baking paper over the top of this and roll out your dough. I used my 6mm (¼ inch) rolling guide for these shortbreads.

Cut hearts

Use your large heart cookie cutter and cut out your biscuits. Carefully slide your cookie spatula underneath your shortbread to lift these up, peeling away any excess dough. Place your shortbreads onto your prepared baking sheet making sure you leave space between each biscuit. You might also want to cut a few smaller hearts out of this dough too.

Roll the red dough

Place your red dough ball on the baking paper and press it with your hands. Next place another piece of baking paper over the top of this and roll out your dough. For this dough I used my 3mm (1/8 inch) rolling guide for these shortbreads.

Small hearts

Use your small heart cutters to cut out several small hearts in a selection of sizes. Pop your hearts off to the side once you are done.

Mould the lips

Take a small amount of your red dough and press this into your lip’s fondant mould. Make sure your dough is firmly pushed in, you can use your cookie spatula to remove any excess dough from the back and create flat surface. Carefully pull back your mould to release the moulded lips, use your fingers to gently ease this out of the mould if you need to. Repeat this process several times until you have enough lips.

If you have any left-over dough, you can roll out to the 6mm thick and cut out some small red heart biscuits.

Decorate

Now it’s the fun bit! Use your red dough decorations and gently press these onto your larger heart shortbreads that you cut out earlier. When pressing on your decorations you don’t need to press too heard as when they bake they will naturally stick to each other.

Time to bake

When you are happy with your designs, it’s time to place your valentine’s shortbreads into your preheated oven, and bake for 15 to 20 minutes. Your baking time will depend on your oven, and how thick you have made your shortbreads. You will know your shortbread are done as they will be lightly golden brown around the outside.

To finish

Once your shortbreads are cooked, remove these from your oven and leave them to rest on the baking sheet for 5 – 10 minutes. Remove your biscuits from the baking sheet and place them on your cooling rack to fully cool. Once your shortbreads are fully cooled, you can package these up nicely all ready to be gifted to your loved ones. If these are just for at home, you can pop these in an airtight container, placing baking paper between each layer. I also recommend putting the kettle on and sampling one of your biscuits with a nice cuppa!

Storage and Shelf Life

Store in an airtight container, using baking paper between each layer of shortbread.

Store out of direct sunlight and in cool dry place at room temperature.

These will last for about two weeks, but the shelf life will depend on your climate and where you have stored these.

Do not store these with any other flavoured biscuits as they can become tainted with the flavour.

Final word

So go on, why not show your loved ones how much they mean to you with these lovely valentine’s shortbread. You don’t need to tell them how quick and easy they are to make, and, anyway it’s not all about the time spent it’s about the thought too! I hope whoever you choose to give these to appreciates the lovely Valentine’s shortbread that you have made for them.
