Have you ever decided to bake a cake or something, then realised you don’t have enough eggs for the recipe? Or do you fancy making vegan cakes, and don’t know what you can use to substitute the eggs in the recipe? Well don’t worry I have 5 substitutes for eggs in baking that you can use.
The best part about these 5 substitutes for eggs in baking is I bet you have the ingredients in your house for at least one of these options, so no need to make a special trip to the supermarket.
Here are your 5 Substitutes for 1 Large Egg in Baking
1. Oil and Baking Powder
Oil and baking powder are great substitutes for eggs in a recipe as they replicate the moisture and leavening properties that eggs provide in baking. The oil provides the moisture and fat, which makes sure your baked treats are still rich and tender. While the baking powder acts as the leavening agent, which helps the batter to rise and become all lovely and fluffy. This is a great substitute in cakes and baked treats where leavening is important.
The amounts you need for each of these ingredients to replicate one large egg is:
Mix 2 tablespoons of water
1 teaspoon of oil (vegetable or canola)
2 teaspoons of baking powder per large egg
2. Mashed Banana
Mashed bananas are another great substitute for eggs in a recipe as it provides moisture, binding, and some leavening too. The bananas add the moisture to the batter, which is what keeps your baked treats soft and moist. Bananas naturally have sugar and pectin in them, which is what helps to bind all the lovely ingredients together. The only possible downside with bananas is they do not have much leavening so your end result for your baked treat, will possibly be a bit denser. This is still a great alternative, but you just need to weigh up if the lack of leavening will be an issue. This is a great option for things like muffins, pancakes and brownies. The other thing you need to think about when considering this alternative is if the banana flavour will work with the other flavours in your recipe.
To replace one large egg with this substitute all you need is:
75g of mashed banana per large egg
3. Yogurt
Yogurt is another great substitute for eggs in a recipe as it provides moisture, binding and some leavening. By using yogurt as a substitute this adds moisture and richness to your batter, which keeps your baked treats lovely, tender and moist. This is a great substitute in cakes and muffins etc. This will change the overall flavour, however I don’t think it is as noticeable as the banana alternative.
To replace one large egg with this substitute all you need is:
65g of plain yogurt per large egg
4. Chia Seeds
Chia seeds are also another alternative to eggs in a recipe as they provide moisture, binding, and some leavening, but again not quite as much as eggs would. This option is also good for cakes, muffins etc.
What you need to replace one large egg is:
1 tablespoon of chia seeds
3 tablespoons of water
To make this you mix the chia seeds with the water, and allow this mixture to sit for 10-15 minutes until it achieves a gel-like consistency before you add this.
5. Milk, Vinegar and Baking Soda
The final substitute for eggs in baking is Milk and vinegar. The milk adds the moisture you need to the batter, so your treats are still lovely moist and fluffy. Vinegar acts as the binding agent when it’s combined with the milk. The acidity in vinegar reacts with baking soda to help the batter rise. This is another great alternative to eggs in baking.
What you need to replace one large egg is:
30g Milk
1 teaspoon vinegar
1/4 teaspoon Baking Soda
How to prepare this egg replacement:
- Mix the milk and vinegar together first. Let it sit for a few minutes until it curdles slightly, forming a buttermilk like consistency.
- Add the baking soda to the milk and vinegar mixture, and stir well.
Final Word
Hope you found these alternatives useful and helpful, whether it be that you have just run out of eggs, or if you want to bake vegan sweet treats. Whatever your reason for needing this alternative, I am sure one of the above will be the perfect substitute, and hopefully you will have what you need in your home so you can get straight on with your baking. My personal favourite is the first option, the oil and baking powder, but all are great options.
